I recently had the pleasure of attending an exclusive tasting at Late August, Chef Williams' newest culinary concept. Nestled within the ION and inspired by the historic Sears Catalog, this culinary gem offers a delightful fusion of Afro and Mexican cuisine, crafting a truly unforgettable dining experience. With Chef Hiladgo, the former head chef of the original Mama Ninfa's, at the helm, you can expect an exceptional treat.

The menu at Late August is a testament to the rich cultural diversity that defines Houston. We sampled a variety of dishes, each one a masterpiece in its own right. The Half Rack of Ribs is truly exceptional. Tender, succulent ribs are paired with a creamy avocado sauce that elevates the dish to new heights. Using fresh handmade tortillas to pull the ribs off the bone created a delicious and harmonious blend of flavors.

The Snapper Escovitch was a standout dish. A colossal snapper, marinated in flavorful jerk seasoning, is served with fresh handmade flour tortillas. Guests are treated to a delightful show as the fish is delicately pulled apart. The combination of spices and the freshness of the fish, paired with the fresh tortillas, make this dish truly exceptional.

The Smoked Chicken Drumlets were a delight, featuring tender smoked chicken adorned with a rich, sweet mole with a hint of chocolate, and crispy deep-fried chicken skin. Each bite offered a beautiful crunch and a burst of flavor.
